Regardless of the win-loss total at the end of the college football season, Eli Johnson was the clear winner at New Mexico State's football media day. Johnson's teammates and coaches have raved about his football IQ and ability since he signed with NM St ate as a graduate transfer from Mississippi. Although he could practice during the spring but could not play in the Aggies two spring games, Johnson gave a glimpse as to why he's been so popular to local media at the Hall of Legends on campus. Johnson wa s candid regarding his future as a coach, his experience in the SEC, COVID-19 vaccines and college football and what he brings to the table for the Aggies. But perhaps more importantly, as likely the only person in the room who has sampled Mexican cuisin e in the Borderland, and Mississippi, Johnson explained why he prefers the Mexican food from his home state.Hear him out. And he is, "prepared to deal with the consequences." "I know how that is going to sound and I know how that comes across," Jo hnson said. "The cuisines are very different. When you are in the southeast, it's more of a Tex Mex style. Mexican food is seen more as a party food. It's a lot of white queso cheese and a lot of just really greasy food. Here in New Mexico, the Mexican f ood is more built to fit into an every day diet. You can go to a Mexican restaurant here in Las Cruces and eat Mexican food every day of the week and probably be OK from a health standpoint. If you do that in northern Mississippi, you will end up looking like me." - Las Cruces Sun News

Adding an offensive lineman who started last season in the SEC highlights New Mexico State's 2021 signing class, which will start with the early signing period on Wednesday. Ole Miss graduate transfer Eli Johnson is one of 16 players the Aggies during th e early signing period. The Aggies added nine offensive players, six defensive players and one athlete early and will add three more defensive players during the regular signing period in February.Last month, NM State recruiting coordinator Cory M artin said the 2021 Aggies will have 92 scholarship players as they expect seven current seniors will return following a lost season due to COVID-19. Johnson started every game at center last year and was a projected starter at the position as the Rebels were set to start camp following a coaching change from Matt Luke to Lane Kiffin. Johnson graduated with a political science degree in 2018 and will receive a Master's degree in homeland security in December. - Las Cruces Sun News

Mississippi starting center Eli Johnson says he won't play football this season. Johnson announced on Twitter that he'll sit out the season and focus on completing his master's degree in criminal justice in December. The Southeastern Conference allows pl ayers to opt out of the season because of COVID-19 and remain on scholarship. Johnson started all 12 games last season, allowing only one sack. His father, David, was hospitalized this summer because of the virus. "I will be forever grateful for my time here at Ole Miss," Johnson wrote Sunday night on Twitter. An Ole Miss football player said that both of his parents have tested positive for coronavirus and that he and his family have been quarantined. Eli Johnson, a senior from Lafayette High School in Oxford, posted on Twitter about his father's positive tes t on Sunday and asked for prayers. He followed up with his mother's positive test on Tuesday. "I cannot thank you all enough for the encouragement and support that has been shown to my family and I," he said. Johnson started all 12 games for the Rebels a t center in 2019.His father, David, covers Ole Miss football and recruiting for 247Sports. Ole Miss coach Lane Kiffin said on a teleconference Tuesday that he hasn't figured out plans for how the team will handle Johnson's return when the team is allowed to reconvene. "That's a medical answer that when we get closer we'll figure out," Kiffin said. "How long does it last?
